Think of it like measuring flour by the cup. Sifted, packed, or aerated, the same cup can vary in actual weight by 30% or more. Tea has exactly the same problem.

This is why tea bags (the standard store-bought ones filled with fannings or dust) brew so quickly and consistently. The particle size is small and uniform, so volume correlates pretty well with weight.

That doesn't work for loose leaf.

Most tea packaging still defaults to volume recommendations because ‘1 teaspoon’ fits on a label. ‘Use 2 to 3 grams, adjusted for your specific steeping vessel’ doesn't.

Does Water Temperature Change How Much Tea to Use?

Temperature and quantity are connected, but it's not as simple as X temperature = Y leaf volume.

Research into tea extraction shows that hotter water extracts antioxidants, caffeine, and other compounds more efficiently. The higher the temperature, the faster and more completely those compounds make it into your cup. Brew at 100°C and you'll extract more than at 75°C, given the same amount of time.

  • Add more water
  • Lower the temperature (particularly useful for green teas)

Once you've landed on something you're happy with, write it down… and that's your baseline for that tea.

From there, you start building intuition.

Going long

Iced tea is another good reason to overshoot.

Brew strong (roughly 50% to 75% more leaf than usual) and pour straight over ice. The dilution from the ice brings it back to where you want it. Same principle applies for anything milk-based. Tea needs to punch through milk, so overshoot and let the flavor hold its ground.

Going short

Trying an expensive new tea for the first time? Start with 20% to 30% less than you think you need. You can always brew stronger next time. You can't un-extract an over-brewed cup of something you paid good money for.

Undershooting also works when you're brewing for guests whose preferences you don't know. A slightly lighter brew gives people room to adjust, whereas a brew that's too strong gives them nowhere to go.

Can You Fix Stale Tea by Using More Leaf?

Short answer: no.

Tea is highly hygroscopic, meaning it acts like a sponge for ambient moisture and odors. Commercial tea is dried down to under 5% moisture to keep it shelf-stable. If it absorbs too much moisture from the environment, it doesn't just get bloated. It starts to oxidize rapidly, go stale, and in some seriously nasty cases, grow mold.

Adding more of a compromised tea to your cup won't bring the flavor back, it just makes it a bigger disaster.

The same goes for green and white teas that have been exposed to air over time. The volatile aromatic compounds that give fresh green tea its brightness evaporate when exposed to oxygen. What's left tastes flat, papery, and stale. Brewing more of it doesn't restore those lost compounds.

Ultimately, storage conditions affect whether your tea is usable, not just how much of it to use. A tea that's performing differently than it used to isn't necessarily a calibration problem. Check your storage first.

The fix is simple. Keep your tea in a completely airtight container, away from light, heat, and moisture. Buy in quantities you'll get through within a reasonable timeframe, particularly for green and white teas. And if something smells off or tastes flat, trust your instincts.
